This Fluffy AF Pancakes Recipe Have Mom’s Stamp of Approval
With Mother’s Day right around the corner, you’re probably trying to figure out what restaurant to take your mom to. But instead of heading to your favorite brunch spot, give your mom the ultimate gift by making a breakfast recipe that she’ll never forget. Introducing these fluffy AF pancakes. Topped with dark chocolate chips, coconut shavings, and bananas (you know, just to be a little healthy), these golden, crispy pancakes recipe will be mom approved — promise. Ingredients:
- 1 egg
- pinch of salt
- 1 banana
- handful of chocolate chips
- 4 Tablespoons baking powder
- 1/4 cup melted butter
- 1/4 teaspoon vanilla extract
- 1 1/2 cups flour
- handful of coconut shavings
- 1 1/2 cups milk
Instructions:
1. Put all the wet ingredients (egg, milk, vanilla, melted butter) into a medium-sized bowl and mix together until completely combined. Put to the side.
2. In another large container, mix the flour, salt, and baking powder together until completely combined.
3. In the same large container, slowly pour the wet ingredients into the dry and mix together. Be careful not to over-mix the ingredients.
4. Over medium-high heat, melt butter on a skillet and carefully pour the batter. Let the pancake cook for two to three minutes, or until you start to see bubbles pop.
5. Flip pancake and cook for about one minute on the other side. Place cooked pancake on a plate. Repeat until the batter is completely gone.
6. Stack pancakes on top of each other and add your (or your mom’s) favorite toppings. (i.e. chocolate chips, bananas, and coconut shavings).
7. Drizzle maple syrup and enjoy immediately.
