These Grilled Vegetable Skewers Are the Perfect Thanksgiving Side Dish
When it comes to Thanksgiving, the bird is usually the star of the show. But even though cooking the turkey is an all-day event, there’s nothing more appetizing than creating mouth-watering side dishes. Cue this roasted vegetable skewer. Whether you’re a vegetarian or not, this veggie kebab is going to amplify your traditional Thanksgiving feast, thanks to its delicious assortment of peppers, zucchinis, squashes, onions and potatoes. Pair it with your bottle glass of wine and a slice of pecan pie for the most unforgettable Thanksgiving feast you’ll ever have.
Ingredients:
Makes four skewers
- 1 lemon
- half an onion
- half a pepper
- 2-3 potatoes
- 1 zucchini
- 1 squash
- 1 teaspoon oregano
- 1/2 cup olive oil
- 1 teaspoon salt
- 1 Tablespoon garlic
- 1/2 teaspoon turmeric
- 1/2 teaspoon of pepper
Tools:
- 4 skewers
- 1 baking sheet
- 1 sheet aluminum foil
- 1 knife
- 1 cutting board
Instructions:
1. Preheat oven to 400 degrees Fahrenheit.
2. Cut up all of your washed vegetables into thick chunks. Place them to the side in their own specific bowls.
3. Pour olive oil, pepper, turmeric, salt, garlic, lemon and oregano into a small bowl and whisk everything together. Place to the side.
4. Line your baking sheet with aluminum foil.
5. Grab a skewer and slowly slide down each individual vegetable one at a time. Alternate vegetables so each one is different. Stop when you hit the end of the skewer and place it onto the baking sheet.
6. Repeat this process three more times until all four of your skewers are complete.
7. Cover your skewers with the marinade mixture and let it sit for about 5-10 minutes.
8. Take the baking sheet and place the whole thing in the oven for about 15 minutes or until the vegetables start to brown and look a little crispy.
9. Take it out of the oven and serve immediately.
