This Pumpkin Hummus Recipe Is Going to Give Your Turkey a Run for Its Money
If there’s one thing to love about Thanksgiving — besides getting a few days off from work — it’s being able to stuff your face with endless amounts of food. Whether it’s your grandma’s chocolate banana pumpkin bread or your uncle’s famous Thanksgiving turkey recipe, any item on that dinner table is free game. However, this year, it’s your turn to contribute something to the table — and lucky for you, we did all the work for you. This pumpkin hummus is everything you could ever want for a Thanksgiving appetizer. It’s sweet, healthy and oh-so delicious. Whether you’re a top chef or you just watch one on TV, this hummus dip is crazy easy to make.
Ingredients:
- 1/4 cup maple syrup
- 1 can chickpeas
- 1 cup pumpkin puree
- 2 Tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- drizzle of honey (optional)
Instructions:
1. Place chickpeas, maple syrup, pumpkin puree, vanilla extract, cinnamon and nutmeg into the blender. Blend halfway.
2. Stop the blender and place two tablespoons of coconut oil into the mixture. Blend everything until completely smooth.
3. With a flexible spatula, carefully scrape the hummus into a bowl.
4. Sprinkle cinnamon and nutmeg on top.
5. Finally, drizzle honey on top of the hummus and serve with cheese and pita bread.
