Try These Caprese Tortellini Skewers for Your Summer Bash
With Memorial Day marking the unofficial start of the summer (hooray!), I’m sure a lot of you will be planning parties, picnics, barbecues and anything else that involves sitting in the sunshine sipping summer cocktails and nibbling on tasty party food. These caprese tortellini skewers are just the thing! They’re easy to make in advance and the herby dressing really brings them to life. Easy, healthy, tasty and pretty — what more could you want in a summer snack?
Ingredients:
Makes approximately 15 skewers
— 2 1/2 cups tortellini
— 1 bunch fresh basil
— 4 Tablespoons extra virgin olive oil (I used olive oil with peppercorns)
— pinch salt
— pinch black pepper
— 2 cups cherry tomatoes
— 2 balls fresh mozzarella, cut into chunks
*You’ll also need approximately 15 wooden skewers.
Instructions:
1. Boil the tortellini according to the instructions on the packet (usually around 4 minutes). When it’s cooked al dente, drain it and rinse with cold water. Set aside to cool completely.
2. Add about half of the fresh basil to a mini food processor, along with the olive oil and some salt and pepper. Blitz to form the basil dressing.
3. Assemble the skewers with the cooled tortellini, cherry tomatoes, chunks of mozzarella and folded basil leaves. Serve drizzled with the basil dressing.
