Turn Breakfast into Dessert With Our Pop-Tart Ice Cream Sandwich Recipe
Pop-Tarts by themselves are a bit of a naughty treat, so this pop tart ice cream sandwich is downright evil! TWO chocolate Pop Tarts are used to sandwich a slab of ice cream, then dipped in piles of melted chocolate and finished off with shredded coconut. A-M-A-Z-I-N-G. It’s the self-indulgent answer to your sweet cravings, stressed-out work days, and PMS (some people might prefer more natural PMS remedies, but scoffing ice cream sandwiches while reciting all the swear words we know is fun too). Ingredients:
Makes 4
- 8 chocolate Pop-Tarts
- 25 ounces vanilla ice cream — if you can find ice cream in a block, it will be easier to slice
- 7 ounces semi-sweet chocolate
- 1/2 cup unsweetened shredded coconut
Instructions:
- Slice the ice cream into 4 x 1-inch-thick slices. Use one of the Pop-Tarts as a template to cut out the slices, so they’re the same size.
- Place a slice of the ice cream in between two Pop-Tarts. Repeat until you have four sandwiches. Place on a tray and freeze for one hour.
- Melt the chocolate and dip one end of the ice cream sandwiches into the melted chocolate. Sprinkle the chocolate with shredded coconut and place back on the tray. Repeat with the remaining ice cream sandwiches.
- Eat immediately! Or cover and freeze until ready to eat (take out of the freezer 5-10 minutes before eating to soften slightly).
