With summer in full force, we’ve got one thing on our collective minds: GRILLING! (Well, after chilling out with some summer daiquiris, that is.) But when the idea of grilling pops up, people automatically start planning around meat. This can get tricky if you’re hosting a few vegetarian friends, or if you yourself are a vegetarian — but it doesn’t have to be problematic! Not only do grilled vegetables taste heavenly, but you can get creative and include marinated tofu, tempeh and, most exciting of all, halloumi! (If you haven’t heard of halloumi before, it’s a grill-friendly cheese. Squee!) You can even go a little crazy and whip up some grilled desserts.
