This Watermelon Float Is Almost *Too* Perfect for Summer
As the days begin to get longer, our palates yearn for more summery fruit flavors. Between parfait popsicles, mouth-watering smoothies and adult Capri Suns, it’s hard not to have this summery food playlist constantly on repeat. But if there’s one concoction that you *need* to try before the blistering cold reappears once again, it’s this mind-blowing watermelon cucumber soda float. If you’re not already drooling from hearing that name, just think about the swirling mixture of watermelon, lime juice and cucumber seltzer, topped with a scoop of lime vanilla zest ice cream. Ingredients:
Watermelon soda:
— 1/2 medium watermelon (about 2-3 cups of juiced watermelon)
— 1/3 cup sugar
— 1 Tablespoon lime juice
— pinch of kosher salt
— 1 cup cucumber seltzer
Vanilla lime ice cream:
— 1 pint vanilla ice cream
— 1 Tablespoon lime zest
— 1 Tablespoon lime juice
Instructions:
1. Juice 1 tablespoon of lime juice and zest 1 tablespoon of lime into a bowl. Scoop vanilla ice cream on top and slightly combine.
2. Add mixture into a blender and blend all ingredients completely. Cover and put back into the freezer.
3. In another bowl, create simple syrup by combining 1/3 cup water and 1/3 cup sugar. Mix together until the sugar completely dissolves. Set simple syrup aside.
4. Cut up around 8 cups of watermelon into little chunks and place them into a blender. Puree until it’s mostly juice.
5. Grab a pitcher and pour the watermelon juice through a strainer or fine-mesh sieve (you should have about 2-3 cups of juice). Discard the solids.
6. Add about one tablespoon of lime juice and a pinch of kosher salt. Mix everything together.
7. Whisk the simple syrup into the pitcher.

9. On a small plate, sprinkle sugar on top. Cut a small triangle of watermelon and coat it with sugar.
10. Take the watermelon juice and pour it into a cup. Top with cucumber seltzer water.
11. Scoop the vanilla lime ice cream into the drink.
12. Garnish with the sugared watermelon slice and your summer just got awesome.
