In an email sent to Brit + Co, a spokesperson for My/Mo Mochi Ice Cream revealed that mochi sales have skyrocketed more than 100 percent this year alone, so even though it’s a food with origins in ancient Japanese history, mochi is undeniably having a moment in popular American culture, too. Here’s what any foodie seeking a good ‘gram needs to know about these extremely versatile bites of heaven.

First of all, the mochi itself is the sweet rice dough that encases ice cream which offers an addictive, chewy texture . There are *plenty* of flavors to choose from including mango, strawberry, green tea, and vanilla bean.
