Easy as… Whole Fruit Hand Pies!

Let’s face it, sometimes we want to have our pie and eat it too. Without keeling over in a huge food coma, preferably. Fortunately, we’ve discovered a way to eat a WHOLE pie. By yourself, without the guilt ;)


Introducing Whole Fruit Hand Pies! Surrounded by a flaky crust, filled with juicy fruit and fillings, these pies are impossible to resist. Go ahead and give it a try!

Ingredients:
– 2 pears and 2 tbsp maple syrup

– 2 yellow peaches, 1 tsp dried thyme, and 2 tbsp goat cheese

– 2 nectarines and 1 tbsp honey

– 2 large strawberries and 2 tbsp nutella

– 2 plums and 2 tsp brown sugar

– 2 sheets pie crust (we used the Trader Joe’s brand)

– 1 egg white

Start by preheating the oven to 375 degrees F.

Make sure all your fruit is washed and clean, and grease a muffin tin.

Cut all your fruit in half, lengthwise, and remove any seeds or cores. Use a large cookie cutter to measure out a round piece of dough that’s big enough to wrap the whole fruit. For the nectarines, drizzle 1/2 tbsp of honey between both halves of the nectarines. Put them back together to create a whole nectarine and wrap in pie crust. Put it in the muffin tin.

Repeat with all fruit and their fillings. For the yellow peaches, fill the inside (where the seed used to be) with 1/2 tsp thyme and 1 tbsp goat cheese per whole peach. For each whole nectarine, drizzle 1/2 tbsp of honey on the inside. Each strawberry should be filled with 1 tbsp of nutella, or more if you’d like (we won’t say anything :P) Finally, each plum should be filled with 1 tsp brown sugar.

When all the wrapped fruit is in the muffin tin, ready for baking, lightly brush the tops with egg white. Bake in the oven for about 30 minutes, or until the crust is a golden brown.

Dig in and top with whipped cream or ice cream!
