This Healthy Veggie Snack Tastes Just Like French Fries
We know it’s hard to share our junk food-loving hearts with veggies (just drop us off at any one of these food trucks, please!), but we’ve found a healthy veggie snack that actually taste like junk food. We’re talking big wedges of zucchini dusted with parmesan, then baked until golden. Dip them in creamy garlic lemon mayo for a luscious lunch or an interesting appetizer. These are a great addition to your party table — the carb-phobics will love ’em. Ingredients:
— 2 medium zucchini
— 1/2 cup grated parmesan
— 1 egg
— 1/2 teaspoon salt
— 1/2 teaspoon pepper
— Small bunch parsley, chopped
For the dip:
— 1/3 cup mayonnaise
— 1 small clove garlic, peeled and minced
— 1 Tablespoon lemon juice
— 1 Tablespoon chopped fresh chives
Instructions:
1. Preheat the oven to 400 degrees Fahrenheit and line a baking tray with parchment or a silicone mat. Chop the ends off both of the zucchini, then chop in half widthways. Slice each piece lengthways into quarters so you get long, fat fries. Break the egg into a shallow bowl and whisk. Place the parmesan into a shallow bowl.
2. Dip the zucchini wedges first into the egg, then roll in the parmesan. Place on the baking tray and repeat until all of the zucchini wedges are on the tray. Sprinkle on the salt and pepper.
3. Place in the oven to cook for 18-22 minutes until golden brown, then remove from the oven.
4. Mix together the dip ingredients in a small bowl (save a few chives to sprinkle on top of the dip).
