Girl Scout Cookie Cream Cups
If you’ve been following us since the beginning, you probably guessed that we’d be scheming up a ridiculously delicious Girl Scout cookie recipe. Well, in this case we’re happy to be predictable because these Girl Scout Cookie Cream Cups are amazing.
First things first. Download FindCookies (the Girl Scout Cookie Locator app) asap and get yourself some cookies. We went with our favorite four classics: Tagalongs, Trefoils, Thin Mints, and Samoas. Now, we’ll be the first to tell you that Girl Scout cookies are pretty perfect as-is, but we couldn’t resist a little kitchen experimentation with our favorite sweet seasonal treats.
Ingredients:
– Girl Scout cookies
– ice cream
– sugar cookie dough
Tools:
– hammer + Ziplocs (our fave!)
– oven
– muffin pan
Preheat the oven to 350 degrees °F. The steps for each different cookie are more or less the same. Reserve 2 cookies for garnish at the end. Then take 5-6 cookies and place in a plastic bag. Hammer them until they’re good and crumbled, but not full-on cookie dust. We’ll begin with Thin Mints.
Repeat with Tagalongs and Trefoils.
And Samoas!
Next, slice your sugar cookie dough into 1/2 inch slices. Your cookie cup making zone should now looks something like the photo above.
Roll your cookie crumbs into the sliced dough so you form a ball. Place the ball in a lightly oiled muffin pan.
Heat in the oven for 15 minutes. They may be a little soft when you take them out, but once they cool down they’ll be perfect little cups.
While the cups are cookin’, it’s time to prep the ice cream. Simply use an ice cream scoop to mash cookie crumbs into the ice cream, and place back in the freezer while cups continue to cook.
Take out the cups and let cool in the muffin pan for about 5 minutes. Then let further cool on a cooling rack, if you have one.
Cut your reserve cookies in half or quarters, or leave whole. These will go on top of the cup as a garnish.
Use a spoon to scoop ice cream into cups, add the cookie garnish, and you’re done.
